Savoy Cabbage

I saw this beautiful cabbage while shopping at Whole Foods. I don’t remember ever noticing a cabbage that looked like this before. The leaves are like lace delicate and light. I couldn’t resist.

I cooked it tonight for my daughter and I. I cut it in quarter pieces. I used some homemade vegetable broth, just a little in the bottom of a 4 quart pot. I decided I was going to braise the cabbage. I used a leek olive oil and lightly drizzled it over the cabbage quarters. I ground fresh pepper and salt as seasoning. Very simple. I cooked it on 350 with a lid to seal in the steam as it cooked.

It was delicious. My daughter grabbed some mustard to put on it. She like it just as it was and did not use the mustard. That was a compliment. She asked me what cabbage does for our body. I knew it was good for digestion, but I needed to look up what else it does for the body.
