Fig Jam

Figs are a fabulous fruit, a sign that summer is soon becoming fall.

My mom has had a fig tree growing in the yard in every house we moved too. She loved figs. I wasn’t really until the last few years I actually started having an appreciation for them myself. I mostly enjoyed dried figs though.

This year I have started buying fresh figs from whole foods. I am experimenting and creating.

Last week I posted fresh peach muffins. It got me thinking I would love to make a fresh fig muffin. I decided to make a jam and then possibly mix the jam into the muffin mix. So, I made some jam tonight. Here is what I did.

I weighed the figs I had less than a pound. I decided to add 2 plums I had to make up the difference. I rinsed and cut the figs in quarters. I peeled the plums and deseeded them. I put them in a pot and added 3/4 cup of pure cane sugar. I mixed the fruit and sugar until coated and let sit for about 10 minutes letting the juices start to flow.

I turned the fruit on low about 3 on the burner. I let it simmer until the sugar was all dissolved. I added 3 tablespoons of fresh lemon juice and 1/2 cup of water. I let it cook until most of the water condensed.

What I did learn was that I wish I had cut the figs up in smaller sizes. This would have made it less chucky. I had thought the figs would fall apart more much like berries or peaches do, but they didn’t. They stayed the same size pretty much. It wasn’t bad but I wouldn’t want a big chunk of fig like that in a muffin. Plus, the figs were a little too mushy for my liking to be in a muffin. The jam is fabulous! I like it on a muffin it is wonderful. However, I will have to try some other way to get the figs in the muffin.

Give the jam a try its super easy and has great flavor. Just look at the color!
