
This is my second go around with perfecting these delightful muffins. Peaches are my absolute favorite fruit. In Colorado, Palisade Peaches are famous. They are pure sunshine turned into sweet sugar. If you love peaches, these muffins are a must have.
A few things before I get started on the recipe. In this recipe it says all purpose flour. I don’t use all purpose flour as it is very processed. All of the health benefits are actually removed from the grain. I have started milling my own flour. I love it! First the flour tastes fresh! I can taste a huge difference in how the flour has flavor, its robust, healthy. Fresh milled flour is also easier to digest the body recognizes it. Flour was not meant to sit on a shelve for years. I use a grain from Central Milling it a soft white grain, it most resembles all purpose flour. The mill I use is from Nutrimill. It is amazing to mill your own flour. I highly recommend it.
I used yogurt in the recipe that I cultured fresh. I actually put it in the mixer the minute the Instapot went off. I love making yogurt. It is so easy and nothing can compare to it in the store. I will never go back to buying yogurt.
The recipe calls for ghee which I make. It is a cultured ghee that I make from the yogurt. You can use butter if you want. In this recipe I used almond milk that I made also. Almond milk is super easy to make, and it tastes like fresh squeezed almonds better than what you get in the store.
So basically, these muffins were made with lots of love and alchemy.
Ingredients
2 Large eggs– I don’t use eggs, allergic instead I use 1 tsp psyllium husk + 3 Tblsp water per egg-mix together, let sit for 10-15 minutes it will become gelatinous.
1/2 cup ghee or butter
1/2 cup of dark brown sugar– I used pure cane sugar light in color
1/2 cup of yogurt– greek style
1 tsp of Pure Vanilla powder– or extract
2 cups of all purpose flour
2 tsp of baking Powder
1 tsp salt
1/3 cup of almond milk or any other milk alternative
Peach Layer
1 large peach skinned and sliced thinly.
1 1/2 tsp lemon juice
1 1/2 Tblsp dark brown sugar
1/2 tsp cinnamon

Crumble Topping
1/3 cup all purpose flour
3 Tblsp brown sugar- I used organic cane sugar with molasses
3 Tblsp chilled butter cubed
Pre-Heat oven to 375 degrees the first time I baked these the top got burnt a little, so I Pre-Heated to 350 instead. I used paper liner for the muffin tin. I have a giant size muffin tin that makes 6. Or you can cook the standard size and make 12. But line the tin with paper liners.
In a large mixing bowl mix together the ghee, sugars, yogurt, vanilla powder, and the egg or egg replacement of your choice. Mix until smooth.
Mix the dry ingredients together, flour, baking powder, salt. Pour into the wet ingredients. Mix together adding a little of the almond milk keep mixing until the ingredients are all mixed and smooth.
Peel the peaches and slice thin. Put them in a separate bowl. Drizzle the lemon juice over the top of the sliced peaches. Sprinkle with the brown sugar and cinnamon. Toss until the peaches are coated and set aside.
In a small bowl flour and the brown sugar. I added a little bit of cinnamon. Add the chilled cubed butter. Toss the butter until coated. Then with your finger mix the butter and sugar together until it resembles crumbles. I added in Vanilla sugar coated almonds for a little crunch.
Now you are going take a spoon full of muffin batter and put in the paper liner. Smush down the batter, then add 2-3 peach slices on top of the batter. Then do another layer of batter, put peaches slices on top. I actually just had a middle portion of peaches, you can layer it so the peaches are through the muffin. My peaches are very juicey I didn’t want the muffin to get too wet from the peaches this is why I kept them in the middle only. Once all the batter is gone and the muffin liners are full sprinkle the crumble on top.
Put the muffins in the pre-heated oven for 30 minutes if they are the giant muffins, 20-25 minutes for the standard size. I watched the muffins closely towards the end I didn’t want the top to get too done or burnt. You can use a toothpick in the center if it comes out clean, they are done. The smell of them baking is heavenly.
